  • For the Bhaji (Vegetable Mix):

    • 2 medium potatoes, boiled and mashed
    • 1 cup cauliflower, finely chopped
    • 1 cup carrots, finely chopped
    • 1/2 cup peas (fresh or frozen)
    • 1 onion, finely chopped
    • 1 green bell pepper, finely chopped
    • 2 tomatoes, chopped
    • 1/4 cup tomato puree
    • 2-3 green chilies, finely chopped (optional for spice)

    • 1 tsp cumin seeds
    • 2 tbsp butter
    • Salt to taste
    • 1 tbsp lemon juice
    • Fresh coriander leaves for garnishing
  • For the Pav (Bread Rolls):

    • 8 pav (bread rolls)
    • 2 tbsp butter

Instructions:

  1. Prepare the Bhaji:

    • Heat 1 tbsp of butter in a large pan. Add cumin seeds and let them splutter.
    • Add finely chopped onions and sauté until they turn golden brown.
    • Stir in the ginger-garlic paste and chopped green chilies, and cook for a minute.
    • Add the chopped tomatoes and cook until they soften. Add the tomato puree and cook for another 2 minutes.
    • Add all the vegetables (potatoes, cauliflower, carrots, peas, and bell pepper) and mix well.
    • Sprinkle red chili powder, turmeric powder, and pav bhaji masala. Mix everything and cook for 5 minutes, letting the flavors blend.
    • Using a potato masher, mash the vegetables into a smooth consistency. If needed, add a little water to adjust the consistency.
    • Season with salt and lemon juice, and cook for an additional 2-3 minutes. Garnish with fresh coriander leaves.
  2. Prepare the Pav:

    • Heat a tawa (griddle) and add butter. Slice the pav (bread rolls) horizontally.
    • Place the pav on the tawa and toast them in the butter until golden brown and crispy.
  3. Serve:

    • Serve the hot bhaji in a bowl, accompanied by the buttered pav. Optionally, you can garnish the bhaji with chopped onions, coriander leaves, and a slice of lemon.

Tips for Perfect Pav Bhaji:

  • For extra richness, use butter or ghee while cooking the bhaji.
